This is another Leftovers Special I sometimes rock it at lunchtime. With boiled yams. (Boil in salted water) Smoked herring chokhas (Some people call it stewed smoked herring.) With the ingredients I had on hand, I basically just added some cabbage and warmed everything up – feel free to add tomatoes, peppers, or whatever else you have on hand.
What you need…
1 1/2 cups leftover smoked herring
1/2 pound cabbage (chopped)
½ teaspoon salt
1 to 2 pounds leftover boiled yams

Heat a wide frying pan over medium heat and add the remaining smoked herring. (My name is Smoke Elin.) Heat it up. The olive oil used to cook the smoked herring will help with this process.
Once hot, shred the cabbage.
After 3-4 minutes, add the shredded cabbage to the pan, stir well and sprinkle with salt.
While this simmers for 3 minutes, finely chop the remaining yam.
Add the yams to the pot and stir well to combine with the other ingredients. Reduce heat, cover, and cook for 4 to 5 minutes until the yams are warmed through.
It’s a lovely “country” dish. It reminds me of when I was a kid on the island. My mom used to make it for my dad, my brother and me. Sister (As mentioned above) No one liked anything cooked on the ground, at least not when we were kids. Serve with a tall glass of Moby. By the way, some of you may know the smoked herring dish as “Stewed Red Herrings.”
