I have a confession: I was scared of making homemade dressings. Why does something simple like Caesar Dressing require so much work, for example? Continuous concern about chopping, mixing, and emulsions will separate. I know I’m not the only one who has dressing anxiety!
But what do you guess? Caesar dressing doesn’t have to be a complicated ordeal with mystery ingredients or excessively complicated techniques.
You can make a very easy and creamy Caesar dressing in just a few minutes. You probably need a blender and a few ingredients you already have in your pantry. I’m talking about three steps, five ingredients, and something like a bold, garlic flavour that will make you rethink Caesar you bought again. No, this does not require any strange processed oils or additives. Authentic food that makes your salad feel like a 5 star restaurant experience.
High protein Caesar dressing
First of all, this recipe is egg-based. This really gives it a luxurious, creamy texture without the need to add a lot of oil or mayonnaise. Instead of traditional raw egg yolks, use hardened eggs. These bring healthy doses of protein to the mixture (why can make a good dressing for you, so why settle into empty calories?).
The flavour of this dressing is thanks to a splash of Worcestershire sauce, a kick of Dijon mustard and a fresh hit of lemon juice. Oh, and don’t forget the garlic. It’s a secret weapon that adds the charm that all Caesar dressings should have. Together, these ingredients work in harmony and offer the bold, tangy, creamy dressing you love.
Traditional Caesar dressing uses anchovy filets or anchovy paste to add to the Umami flavor. Here is the classic Caesar recipe, but this version skips the anchovies.
And the extra virgin olive oil in this dressing is important. It adds the smooth richness you expect from Caesar. It uses pure olive oil, full of healthy fats (not highly processed). So, knowing that this dressing doesn’t have funky oils or artificial preservatives is a must. Healthy and authentic ingredients.
Easy Caesar Dressing
The best part? You’re ready in just one step. There is no whisk, no emulsifying or separate drama. Throw everything into the blender. In about 5 minutes, you’ll find a Caesar dressing that’s perfect for drizzling on top of salad, soaked or roasted vegetables. Plus, it’s a great alternative to store-bought dressings that are often packed with junk.
Delicious than the crispy romaine lettuce, grilled chicken and capers. Salad recipes are often part of my meal plan, and this is part of my usual rotation. Naturally gluten-free, but if you want a dairy-free option, this dressing is dairy. And it lasts up to 5 days in the fridge, so you can prepare your meal and make it in advance!
The easiest 5 minute Caesar dressing recipe
A high protein Caesar salad dressing recipe perfect for salads, roasted vegetables or chicken.
- 4 Sturdy eggs
- 1 TBSP White vinegar (or apple cider vinegar)
- 1 Small spoons Dijon Mustard (Or yellow, or 1/2 teaspoon mustard powder)
- â…” cup water (Adjust to suit your desired consistency)
- 1 TBSP Worcestershire sauce
- 2 cloves Fresh garlic, peeled off (or 1 teaspoon of garlic or ½ teaspoon of garlic powder)
- 2 TBSP Fresh lemon juice
- ½ Small spoons salt
- ½ Small spoons Black pepper
-
Place all ingredients except Parmesan in a blender or food processor.
-
Blend for about 30-45 seconds or until smooth and creamy. If you find the dressing is a little thicker for your taste, you can add a little more water to thin it down to the consistency of your taste.
-
Once it’s creamy, add the Parmesan cheese and pulse it a few times just to incorporate it. This keeps the dressing creamy while giving it its classic cheesy flavour and a small texture from the Parmesan. If you want it to be very smooth, you can blend Parmesan with everything else from the start – but traditionally, pulsating it at the end gives it the best flavor and consistency.
-
Taste and adjust the seasonings. If you are a garlic lover (guilty!), or think it’s necessary, if you are a garlic lover (guilty!), add lemon juice, more garlic cloves for the extra tangs.
-
Serve and have fun!
