Oven-baked cod with loads of garlic and butter, plus a pleasant touch of heat, is one of my all-time favorite healthy fish meals. Cod is relatively mild in “fishy” flavor and tastes great with just about any side. I love to pair it with coconut rice and whatever veggie I have on hand.
