Technically, roti is an unleavened flatbread popular in Indian and Caribbean cuisine. Trinidadian chicken roti refers to the curried chicken filling inside. The dish originates from Trinidad and Tobago, and the inhabitants of the island nation like to honor their Indo-Caribbean roots, which is why they produce some seriously tasty curry and seafood dishes.
And Trinidadian Chicken Roti is no exception. Imagine buttery spicy chicken, but without all the butter. Just as tasty and maybe a little healthier? At least that’s what I tell myself. 😜
Recipe Ingredients

The ingredients you will need are finely chopped onion, minced garlic, white pepper, thyme, chicken bouillon powder, cumin, smoked paprika, allspice, curry powder, nutmeg, and a little cayenne pepper powder if you like it spicy. 😅
How to make Trinidad Chicken Roti
Marinate
- Preparation chicken – Place the chicken in a large bowl or pot and add the salt, garlic, thyme, white pepper and curry powder. (Photo 1)
- season – Using a spoon or your hands, stir the chicken until the seasoning is evenly distributed. (Photo 2)
- Marinate – Place in the refrigerator and marinate for 30 minutes or overnight.
Cooking
- Sauté – Heat the oil in a large saucepan. Add the onion, garlic, thyme, cumin, allspice, smoked paprika, nutmeg and curry powder and cook for 2-3 minutes, stirring occasionally, until the onion is translucent.
