Morga in Trinidad is not just having one of the hottest peppers in the world, like I used for my own use The hottest homemade pepper ace in the world years ago. With its vibrant Merikin community, Morga Hill Rice is world-renowned. They brought it to Trinidad and Tobago around 1812.

You need it…
Chicken legs 4 (thigh drumstick)
1 pound pumpkin
Onion 2
Two big carrots
One of the garlic
One big pepper
1/4 cup olive oil
1 tablespoon sea salt (Splitting)
1 tablespoon black pepper (split)
3/4 cup Morga Hill Rice
1 lb sweet potato
2 tbsp Caribbean green seasoning
8-10 cups of water (or stock)
Two leeks (chop)
Two tablespoons chopped with parsley

Mix olive oil with 1/2 of salt and 1/2 of black pepper. Coat the chicken with garlic, onion, carrots and pumpkin. Roast in a preheated central rack (375°F) 50 minutes oven (Not covered).

Tilt the oil from the roast sheet into the soup pot and add the Morga Hill rice (The rice works and adjusts the cooking time)and cook on Med/Low for 3 minutes. Its flavourful oil covers the rice and gives the grain a lovely flavour with a toast.

Remove the skin from the peppers, onion and garlic and give it a coarse chop, along with carrots and pumpkin. Add everything to the pan and stir until well mixed.

Spin heat to medium and add the chicken along with the Caribbean green seasonings, cubic sweet potatoes, remaining salt and black pepper.


Cover with water or stock (Chicken or vegetables)Add chopped green onions (For additional flavors, you can add some bay leaf and some twigs of fresh thyme)and bring to a boil. Then slowly bring to a boil.

After 35 minutes, the rice should be tender and cooked. Taste and adjust the salt to your liking. If you are using traditional stock, please note that it contains a high sodium content.

Turn off the stove and throw chopped parsley.

If you want spicy elements in the soup, add water to the soup pot and then add your favorite spicy pepper or pepper sauce (hot sauce).
