Football is very popular here in America. You can imagine the hustle and bustle at home as my son and husband cheer on their favorite team on game day. Yes, but for me it’s all about the food. 😉
One of our favorite appetizers is the homemade sausage roll. This super easy and delicious snack is sure to please everyone!
What is a puff pastry sausage roll?

- aromatic – Sauteed onions and garlic, thyme and cayenne pepper in a little oil to form the base of flavor.
- meat – Bulk sausages (pork, beef, chicken) are the norm. DIY sausage It’s an economical option. 😉
- filling – Adding parsley, salt, breadcrumbs, eggs, and smoked paprika adds flavor to the sausage and brings it together.
- pastry dough – Pre-made, light and soft puff pastry creates a melt-in-your-mouth deliciousness. Then apply egg wash to make it gorgeous.
How to make sausage rolls
- Saute – Heat the oil in a medium saucepan and sauté the onions for about 1 minute. Then add the garlic, thyme, and cayenne pepper. Stir for another minute or two until the flavors develop (be careful not to burn them). (Photo 1)
- meat – Combine the sausage or ground beef, parsley, salt, breadcrumbs, eggs, and smoked paprika in a medium bowl with the sautéed ingredients. Mix until completely combined. Divide into 2 or 4 portions, depending on the size of your puff pastry. (Photos 2-3)
- assemble – Roll out the thawed puff pastry on a lightly floured surface. Spoon some of the sausage mixture and spread it along the length of each strip, leaving about 1/4 to 1/2 inch at the edges. Wrap the pastry tightly around the sausage mixture and brush the edges with beaten egg to secure. (Photos 4-5)
- rest – Repeat this process for the remaining sheets. Letting it rest in the refrigerator for about 10 minutes will make it easier to cut. (Photos 6-7)
- slice – Using a sharp knife, cut each roll into approximately 8 or more pieces. In the photo, it is cut into 10 pieces to make 20 sausage rolls, and in the video, it is cut into 6 pieces to make 12 sausage rolls.
- bake – Brush the sausage rolls with the remaining egg wash. Bake in a preheated oven at 205℃ for about 30 minutes, until the pastry puffs up and the meat is cooked through. Remove and serve hot, warm, or at room temperature. Add ketchup if you like. (Photo 8)

- If you have gluten-free guests, gluten-free puff pastry is fine.
- Breakfast sausage is my usual choice, but you can also use your favorite bulk sausage. As long as the sausage is not cooked, you can cut off the casing or squeeze the sausage out of the casing.
- Substitute onion and garlic powder for sautéed onions and garlic to make it even faster.
Preemption and storage
Assemble the sausage rolls the day before, layer them with parchment paper in between, and refrigerate in an airtight container. Brush with egg wash just before baking.
Freeze puff pastry sausage rolls in a single layer on a baking sheet. Once solidified, remove and place in a ziplock freezer bag. It’s okay for 1-2 months. If baking from frozen, add 7-10 minutes to oven time.
You can also bake and freeze or refrigerate for 1-2 days. Heat in a preheated oven (180℃) or air fryer for about 10 minutes.
