We eat a lot of salad here, so I like to vary the dressings I use. I’m a fan of ranch dressing, but I can get tired of it after a while. This homemade pomegranate vinaigrette is fruity and light, so it can be served on salads, vegetables, or even as a marinade.

It goes without saying that the pomegranate salad dressings sold at the supermarket are not ideal. It’s not the fresh vinaigrette you’d expect because it has added vegetable oil, sugar, and flavorings. Making it yourself takes just a few minutes and is packed with flavor.

I like making different homemade dressings. Because homemade dressings are more nutritious (and taste better!). Pomegranate vinaigrette has a fruity, zesty flavor and is naturally dairy- and gluten-free. Pomegranate juice is the star of the show and is rich in antioxidants that support heart health. Extra virgin olive oil provides a creamy mouthfeel and is rich in omega-3s, which are healthy and anti-inflammatory. Like pomegranate, olive oil is also great for heart health.

To offset the heaviness of the olive oil, we added apple cider vinegar for a tangy flavor and gut health benefits. Dijon mustard also adds a little tang and subtle spiciness. Honey (or maple syrup) brings it all together and adds a natural sweetness.

We use fresh herbs from our garden to boost antioxidant properties. It’s easy to grow on the windowsill during the cold months! You can also use dried herbs in place of fresh herbs if you have them.

This bright vinaigrette is great on salads, roasted vegetables, and even as a marinade. enjoy!

  • In a small bowl or mason jar, add pomegranate juice, olive oil, apple cider vinegar, Dijon mustard, lemon juice, and honey (or maple syrup).

  • Stir in oregano, marjoram, and minced garlic. Season with salt and pepper.

  • Mix the ingredients until emulsified, or close the jar and shake until well mixed.

  • Taste the vinaigrette and adjust seasoning as needed.

  • Refrigerate for at least 30 minutes until flavors meld. Shake or stir before serving.

  • You can drizzle it over your favorite salad or use it as a marinade.

Here’s one way to use your new pomegranate vinaigrette. The flavors of these ingredients work well together, and the pomegranate vinaigrette adds a fruity, tangy accent.

  • Start with plenty of vegetables like arugula, spring mix, and spinach.
  • Add your favorite fresh vegetables. Cucumbers, shallots, and peppers are good options.
  • Add goat cheese or feta cheese on top.
  • Sprinkle with dried cranberries, fresh pomegranate seeds, and chopped pecans.

Substitute for pomegranate vinaigrette dressing

If you don’t want to use apple cider vinegar, balsamic vinegar or red wine vinegar will also enhance the flavor. Olive oil is often used in salad dressings. avocado oil also works. Some people prefer the more natural taste of avocado oil.
