Fried rice has always been one of my favorite dishes. This dish is so versatile you can add almost anything to it for a delicious meal the whole family will enjoy. It’s so easy to make; just add all the ingredients one by one to a wok and stir fry for a few minutes until cooked through.
I’ve enjoyed almost every variation of fried rice, from spicy to mild, meat-filled to veggie-filled. Each one is appealing, but pineapple fried rice is at the top of my list. Hello pineapple lovers! 😉

- Rice – Long grain rice that has been left out for a day works best as it is drier and will absorb the flavors of the sauce. I use white or brown basmati rice, whatever I have on hand.
How to make pineapple fried rice
- oil – Heat a large wok or frying pan with 1 tablespoon oil over medium-high heat.
- shrimp – Add shrimp and fry for 3-4 minutes or until lightly pink. Remove and set aside. (photo1)

This dish tastes great with leftover rice, so it’s perfect for making ahead. Cook the rice the day before and keep it in the fridge until ready to cook. The fried rice, on the other hand, can be cooked the day before and kept in the fridge overnight. It’s also delicious reheated the next day.
How to serve and store
Pineapple fried rice is delicious served hot from the skillet, garnished with a sprinkling of fresh coriander and a squeeze of lime juice.
