Mushroom rice recipe – This simple rice recipe delivers delicious flavor. Bacon, rice, and mushrooms combine with the smoky heat of paprika and Creole seasoning. Enjoy as a side dish or add protein and veggies for a healthy one-pot meal.

Why mushroom rice is effective

- Then rinse off the bits from the pan with broth (or water if necessary) to bring out the flavors that are soaked up by the rice. The bacon and mushroom bits are great.
Recipe Ingredients
- bacon The rice is infused with layers of savory, smoky flavor.
- mushroom – Button mushrooms, cremini mushrooms, oyster mushrooms, baby bella, shiitake mushrooms, and portellas all make great umami-packed side dishes.
- seasoning – Onion and garlic add a savory aroma to the kitchen. Next comes jalapeno, thyme, smoked paprika, Creole seasoning Fresh herbs, such as scallions, make a gorgeous garnish, and using bell peppers instead of jalapeños will tone down the heat.
- broth – You can use water if you like, but using broth (vegetable or chicken) adds depth and flavor to the dish.
- White rice – Aromatic basmati and jasmine rice are my favorites, but you can also use long-, medium-, and short-grain rice to create a variety of rice textures.
How to make mushroom rice


- bacon – Heat a large frying pan over medium heat and fry the bacon until brown and crispy. This will take about 5 minutes. (Photo 1)
- Dripping – Remove the bacon from the pan and transfer it to a plate. There should be about 3 tablespoons of bacon fat remaining in the pan. If not, add more oil or butter to the pan to make 3 tablespoons.
- mushroom – Add mushrooms and sauté for 2-3 minutes. (Photo 2)
- seasoning – Add onion, garlic, jalapeño, thyme, smoked paprika, and Creole seasoning. (Photos 3-4)
- Rice – Pour in the soup and add the rice, bacon (save a little for garnish) and salt and pepper to taste. Bring to a boil, reduce heat, cover and simmer until the rice is cooked (about 15 minutes or more).
- serve – Leave for 5 minutes and fluff with a fork. Garnish with spring onions and serve.


Recipe Variations
- One-pot mealTo make it a true one-pot dish, heat through some shredded chicken or beef.
- Vegan. For a vegan version, omit the bacon and replace the butter with olive oil.
- vegetables. Feel free to add your favourite veggies – diced celery, carrots and bell peppers are pretty to look at, while spring peas or spinach make for a nutritious final dish.
- Mushroom cream chicken and rice – Replace half the soup with cream of mushroom soup for a delicious mushroom flavor, then add shredded roasted chicken for a quick and easy one-pot meal.
- Grilled mushroom rice. Mix all ingredients according to recipe and transfer to a 9×13 baking dish. Bake at 350°F (175°C) for approximately 30 minutes or until cooked through.
Tips and Notes
- Brown rice would work fine for this recipe, but it would take 30 to 35 minutes to cook and might need a little more liquid.
- Rinse the rice under cold running water before cooking it until fluffy.
- If your mushrooms aren’t pre-sliced, slice them as evenly as possible to ensure they cook evenly.
Advance preparation and storage methods
Mushroom rice is perfect for busy weeknight dinners and can be made ahead and stored in the fridge for up to 5 days or in the freezer for up to 3 months.
Thaw frozen mushroom rice in the refrigerator overnight. Then warm it on the stove over low heat, in a 350°F (175°C) oven, or in the microwave. Leftover rice tends to dry out, so you may need to add a little broth to rehydrate and freshen it up.
