  1. Instead of marshmallows, use 10 oz (280-300 g) marshmallow fluff (marshmallow cream, spread, or paste). Let the cake cool for about 5 minutes before spreading the marshmallow spread.   • Preheat oven to 350°F (175°C). Lightly grease a 9-by-13-inch baking pan.

  • In a medium mixing bowl, sift flour, sugar, cocoa powder, baking powder, baking soda, and salt. Let’s set it aside.

  • In a large mixing bowl, combine the oil, eggs, vanilla, milk, and sour cream and mix with an electric mixer until completely combined, being careful not to overmix. (If you overmix, the gluten will develop too much, resulting in a dense, chewy cake.)

  • Carefully add boiling water on low speed. Beat the dough on high speed for 1 minute to create air bubbles. Add the dry ingredients to the wet ingredients and mix until completely combined.

  • Pour the batter into the prepared cake pan and bake for about 30 minutes. Toothpick test to check if the cake is baked. If a toothpick comes out cleanly, it’s done.

  • Remove cake from oven, spread mini marshmallows on top and return to oven for 2 minutes or until marshmallows are slightly melted. Remove from the oven and let cool completely.

  • Melt the butter in a small saucepan. Using a wooden spoon, gradually add the cream and cocoa powder. Cook, stirring constantly, for about 2 minutes.

  • Remove from heat and combine vanilla and powdered sugar with an electric mixer. Mix until smooth. Drizzle immediately over the cooled cake and refrigerate for 25-30 minutes or until the frosting is set.

Tips and notes:

  1. If you don’t have a sieve, use a colander with small holes. Sifting is important because it helps mix the dry ingredients better. Cocoa powder is especially important in this recipe because it tends to clump.
  2. If using marshmallow fluff, let cake cool for about 5 minutes first. Then place the fluff on top of the cake and let it sit for about 5 minutes before trying to spread it out. The heat from baking softens the fluff and makes it easier to stretch. Next, proceed to making the chocolate fudge sauce.
