According to many home cooks on the Internet, it can be difficult to make Madeleine lumps rise, but with the right ingredient ratios and baking powder, it’s a total breeze.

Are madeleines cookies or cakes?
I call them cookies, but their texture is somewhere between the two desserts. Madeleines are usually called cakes because they are more spongy than an actual cookie, but they have a bit more bite to them so you can hold them in your hand without worrying about them crumbling.
Anyway, I’m not here to argue about words, what matters is how buttery and delicious they are! 😜
Recipe Ingredients

- option material – If you want, you can add salt and grated lemon zest to the dough and sprinkle the madeleines with powdered sugar once they are out of the oven.
How to make Madeleine cookies
Make the dough
