Light, fluffy and perfectly refined, these Madeleine Cookies or Madeleine Cakes are a deliciously buttery treat. And best of all, they look spectacular yet are super easy to make! ✨

The perfect Madeleine cookie recipe features an attractive scalloped shell texture on one side and a beautiful high hump on the non-scalloped side. According to many home cooks on the Internet, it can be difficult to make Madeleine lumps rise, but with the right ingredient ratios and baking powder, it’s a total breeze.

Madeleine cookies are not only elegant to look at, but also a pleasure to eat. The generous amount of sugar in the dough makes them soft, fluffy and slightly crunchy, making them the perfect accompaniment to a hot cup of coffee or afternoon tea. ☕

Are madeleines cookies or cakes?

I call them cookies, but their texture is somewhere between the two desserts. Madeleines are usually called cakes because they are more spongy than an actual cookie, but they have a bit more bite to them so you can hold them in your hand without worrying about them crumbling.

Anyway, I’m not here to argue about words, what matters is how buttery and delicious they are! 😜

Recipe Ingredients

Ingredients for Madeleine Cookies
  1. egg – Beating the eggs adds air and creates a beautiful cake that looks like a cookie cake. I used egg whites but you can also use whole eggs and they will give you beautiful colors.
  2. sugar – The sugar not only sweetens the madeleines, but also gives the dough a subtle caramelized effect, which forms the crust of the bread.
  3. vanilla Extract – Vanilla extract works great as a powerful flavor enhancer.
  4. flour – All-purpose flour, a pantry staple, is the star of this cake/cookie, with a touch of baking powder added to make it rise.
  5. butter – Generous amounts of butter add richness and flavor to these little beauties and are a vital ingredient for their light and fluffy texture.
  6. option material – If you want, you can add salt and grated lemon zest to the dough and sprinkle the madeleines with powdered sugar once they are out of the oven.

How to make Madeleine cookies

Beat the egg whites (or whole eggs), add the vanilla, and slowly mix in the dry ingredients.

Make the dough

  • preheat Preheat oven to 350°F (175°C). Grease and flour a madeleine mold or spray with nonstick cooking spray.

Making Madeleines

  • Filling mold – Spoon the batter into the prepared madeleine molds, filling each mold about three-quarters full. After pouring, tap the bread gently on the counter to remove any air and ensure an even texture. (Photo 9)
  • bake Bake for 8 to 10 minutes, or until edges are lightly golden and spring back when gently pressed. (Photo 10)
  • nice – Remove the madeleines from the oven and leave to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  • serve – Once cooled, sprinkle the madeleines with powdered sugar if you like. Enjoy your homemade madeleines with tea or coffee.

Recipe Variations

  1. Taste the chocolateFor extra flavor, replace 2-3 tablespoons of flour with cocoa powder and add a handful of small chocolate chips. Once cooled, dip half of the madeleines into melted dark or white chocolate.
  2. Make matchaTry adding a teaspoon or two of matcha powder to the batter. Matcha madeleines are especially delicious when halved and then dipped in melted white chocolate chips.
  3. Try the orange and almond madeleines. Substitute the zest of one orange for the lemon zest and add finely ground almonds instead of 1/4 cup of flour. 😋

  1. Preheating your oven thoroughly before baking will help the madeleines rise faster and form their characteristic humps.
  2. Butter is a key ingredient, so using high-quality unsalted butter will improve the flavor and texture of your madeleines.
  3. Madeleine bread Non-stickMake sure to oil it well, otherwise the madeleines may stick to the edges of the scalloped bread.

Advance preparation and storage methods

Madeleines are best eaten fresh but can also be eaten the next day, or, once completely cooled, can be frozen for up to 3 months.

If you have any leftovers (a big possibility), store them in an airtight container at room temperature for up to 3 days.
