ginger and lemongrass (It’s called Caribbean fever grass.) These are two of my favorite flavors for marinating meat. Especially used when grilling. It’s probably not a Caribbean recipe, but the closer you look at the ingredients in maridan, the more you’ll understand why I shared this recipe.
What you need…
2 pounds chicken
2 pounds of pork
1 tablespoon fish sauce
1/2 tablespoon vegetable oil
1 teaspoon grated ginger
2 green onions (chopped)
3 chili peppers (chopped)
4 cloves garlic (broken)
1 pimento pepper (chopped/as you like)
1 tablespoon soy sauce
1 tablespoon sugar
1 1/2 tablespoons rice vinegar
1 teaspoon black pepper
1/2 teaspoon salt
1 1/2 tablespoons finely chopped lemongrass
1 tablespoon hoisin sauce

Make the marinade by adding everything listed in the ingredients list except the chicken and pork. Wear gloves when handling peppers and wash your hands with soap and water immediately afterward. Use your favorite spicy pepper in the amount you can tolerate.
In the video, I explained how to tap the lemongrass with the handle of a knife before cutting it. This will further damage the stem and cause the fragrant oil inside to leak out.
Since I made it with a combination of chicken and pork, I placed it in a bowl and separated the marinade. Marinate for at least 2 hours before grilling.
About 30 minutes before the charcoal grill was finished, I took it out of the fridge and let it come to room temperature.
Cook over direct heat for 2-3 minutes on each side, then cover and cook over indirect heat for another 25 minutes. Grilling time will vary depending on the thickness of the meat. Keep in mind that the sugar in the marinade can quickly burn or burn.
Basically, bake as you normally would.
Serve with lime wedges or hoisin sauce as a dip. You can also brush on some hoising 1-2 minutes before you finish grilling. Slice up and get ready to enjoy some of the best chicken and pork you’ve ever eaten.
