Now I’ve probably heard (or tried) about Sriracha sauce. This famous chili sauce has appeared in shops and even restaurants. It’s surprisingly easy to make, and you can also add a nice kick to your food, add probiotics to ferment it!
The original sauce was made with red chili peppers in Thai sriracha. Vietnamese immigrants, David Trancreated a version of himself and launched the Huy Fong Sriracha, named after the ship that took him to America. Made with Thai Chili Peppers, it has been a growing trend since the 80s, but it has really become popular over the past few decades.
What is Sriracha?

Huy Fong is considered the original Sriracha sauce (called “Rooster Sauce”), but many other brands have been pop-up since then. There are websites, cookbooks and fan clubs dedicated to this seasoning. I prefer to make it myself while they discuss the best brands and recipes!
One of the advantages of ready-made sriracha sauce is that it doesn’t really get any worse. And like ketchup, it is very versatile. Unfortunately, like ketchup, sriracha contains quite a bit of refined sugar and some preservatives that allow for its long shelf life.
Homemade Sriracha Sauce Recipe
Like most, homemade hot sauces are healthier than the store you purchased them. The process of making Sriracha is much easier than you think!
This recipe is inspired by the famous rooster sauce, but can be optionally fermented, extending shelf life. Fermentation also increases vitamins and preserves food naturally. I often find other vegetables fermented at my counter.
Sriracha recipe secret ingredient: fish sauce
The only ingredient you may not have is the fish sauce, but I recommend grabbing the bottle before you make this. This unusual sauce gives the sriracha a deep flavor and is a great addition to many other recipes.
My favourite brand is Red boat fish sauce. It also tastes great in many recipes, especially those with Asian themes. If you don’t have fish sauce or don’t really like it, you can use equal parts bone soup Coconut amino Use it as a substitute.

Recipe for lacto fermented sriracha
Delicious spicy sriracha recipes without refined sweeteners (and sweetener-free options) and additional optional fermentation that extends shelf life and improves nutritional profile.

Cut the top from the peppers and peel off the seeds and membrane.

Finely dice with peppers and fresh garlic.

Place pepper, garlic, salt, vinegar, fish sauce and coconut amino in a large food processor.

Add tomato paste and raw honey and puree the solid.

Transfer to a small pot and simmer.

Simmer for 10-15 minutes until slightly reduced and thick. Add vinegar, sweeteners, or coconut aminos if necessary.

Transfer to a quart-sized mason jar and store in the fridge if necessary.
Fermented Sriracha Sauce

For fermented sriracha: Stir whey into a glass jar in the sriracha sauce.

Let the jar sit at room temperature for 3 days, then move it to the fridge. If your home is very warm, the fermentation time may be a little shorter. This fermentation process extends shelf life by about a month and provides a deeper flavor.

- Use pineapple juice instead of vinegar for sweet sauce, omit sweeteners
- Store in an airtight container in the fridge. Mason jars are good for this.
- This recipe gives you about 2 cups of Sriracha sauce.
Choose your pepper
Important note: Like any other hot sauce, this sriracha recipe is spicy! Use small amounts in your recipes or use them as a seasoning at first. It is also recommended to use gloves when making this (or any) hot sauce.
Sriracha is of course very spicy, but you can really use any pepper you want. Choose other hot chili peppers for slightly different flavors like Habanero and Serrano Peppers. Tone down the spices with some green jalapeños, red jalapeño peppers, or even peppers. The good thing is that you can control the heat level!
Try sweet red peppers (omitting sweeteners) for a spicy version with a great flavor. You can use this as a dip sauce, add it to your recipes, or create Sriracha Mayo.
