Who doesn’t like ice cream on a hot summer day? Even if you are avoiding dairy products, there’s no reason to miss it! When I was avoiding my son’s dairy products many years ago, I first learned to make homemade ice cream. I’ve added dairy products to my diet, but this dairy-free mint chocolate chip ice cream recipe is still a family favorite.
This mint chocolate ice cream brings creaminess from coconut milk and avocado. Creating ice cream is on the summer bucket list, so I’m happy to have an ice cream recipe full of nutrients and healthy fats for kids to enjoy.

Instead of whipping cream or heavy cream, this mint chip ice cream gets creamy from the avocado.
Avocados have a mild taste and creamy texture that is perfect for dessert. I previously used it in a cucumber lime vegetable smoothie and a shamrock shake with real food. Every time I find a fair amount of avocado, I know it’s time to stock up on chocolate mint ice cream (and perhaps avocado brownies too).
Another reason avocado works so well with mint chocolate chip ice cream is the light green color that naturally adds. It’s not as bright as the coloring of green foods found in store-bought versions (probably a good thing!).
Homemade mint chocolate chip ice cream with coconut milk
To make the ice cream, I chip the chocolate chips together in a blender and pour them into the ice cream maker. When the chocolate chips start to thicken, add the chocolate chips. If you don’t have an ice cream maker, you can freeze without one. Mix occasionally until thick.
This can be either semi-sweet chocolate chips or dark chocolate. You can also use chopped chocolate bars. A small bit of chocolate adds a nice crispy texture to the smooth ice cream. I always opt for dark chocolate because of the health benefits and fewer additives.

Make dairy-free mint chocolate chip ice cream at home, filled with coconut milk, avocado and honey.

Place all ingredients except the chocolate chips in a blender and puree until smooth.

Pour the mixture into an ice cream maker and stir until thick.

Add chocolate chips and cancel for another 2 minutes or more.

The ice cream will have a very soft texture at this point. It works immediately as a soft serve or can be poured into a safe bowl in the freezer and frozen until ready to use.

Thaw at room temperature for 10-15 minutes before serving.
