This is a tea that my siblings and I grew up enjoying, especially during flu season. “Bush” tea was very common in the small village of Guaracara in Trinidad where I grew up. orange peelLime Bud, and Soup Sop Leaf were the ones I wanted to have with Milo, Ovaltine, and Hot cocoa tea Every morning.

What you need…
3 sprigs of lemongrass
4 slices of ginger
8-10 cups of water
honey or sugar (option)
1/2 lemon (option)

Give me some lemongrass (In the Caribbean it is called fever grass) laundry. Then you can chop it into pieces or tie it into a ring (to put it in the pot) Like I did.
Wash or scrape the ginger.

Add water and bring to a boil.

Simmer for 5 minutes and turn off the stove. Let this liquid steep for 3-4 minutes, then strain and enjoy.


You can sweeten it by adding sugar, honey, or your favorite sweetener in any amount you like.
