If you’re craving something different this summer, there’s a great recipe to run for money at Nando’s Peri Peri Chicken. It will definitely make you excited to fire the grill. You can gently make it spicy or raise the heat up as much as you want. I won’t judge.

I made this recipe a bit spicy as my son is not a fan of big spicy foods. So I made sure he enjoyed these grilled chickens the same way I did. But of course, I separated some pieces so I was able to add more spices as the rest of us love them that way. 😉

What is Periperi Chicken?

It is a spicy dish known as piripiri chicken, made in Angola and Mozambique when Portuguese settlers enter with chili peppers called piripiri (piripiri). The chicken is marinated Peripa Resources Other seasonings before the grill. Some people call them African bird-eyed peppers because of their shape.

This delicious hot sauce is a blend of tingly chili chili, lemon, olive oil, herbs and spices, and balances sour, sweet and salty. Complex and versatile sauces, such as chicken, pork, beef, vegetables, etc., are perfect for almost anything.

How to Grill Periperi Chicken

Preparation and marination
Make a marinade and marinate the meat

Marinate chicken

  • I’ll rub it 2 teaspoons of lemon juice and creole spices or salt and pepper. (Photo 2)
  • Marinated – Place the onion, garlic, basil, oregano, peppers and peripe sauce in a food processor or blender, then add olive oil. Pulse for about 30 seconds until well mixed. (Photo 3-4)
  • Marinated – Place the chicken in a stainless steel or glass bowl and soak it in a marinade. Cover and refrigerate for at least 2 hours, preferably overnight. (Photo 5-6)

Grill the chicken

  • I’ll preheat Medium-high heat from the grill.
  • drain – When ready, remove the chicken from the marinade with tongs and drain any excess marinade. Book a marinade. (Photo 7)

Variations of recipes

  1. Chicken exchange. Feel free to use pork, beef, lamb or even fish. However, don’t forget to adjust cooking times as they vary depending on the size and meat you use.
  2. Baked chicken. On rainy days you don’t want to grill, grill at 400°C (205°) for 35-40 minutes. The internal temperature must reach 165° (75°).
  3. Periperi chicken bowl. Steam the chicken Cajun Rice or Jamaican rice and peas For the ultimate comfort food combo.

Makeup and storage instructions

Marinate the chicken for about 12 hours and soak up all the flavors for the best grilled periperi chicken. Refrigerate marinated chicken in an airtight container or ziplock bag for up to 2 days, or freeze for up to 2 months.

Pro tips: When you marinate chicken for more than two days, the acid begins to break down the protein fiber in the chicken, making the chicken mushy. If you can’t cook within 24 hours, it’s better to freeze it.

Place the remaining grilled chicken in an airtight container for 2-3 days. Or freezes for up to 4 months. Thaw the refrigerated chicken in the fridge overnight and reheat in the following way:

  1. oven – Transfer to a baking dish and add enough chicken stock to prevent the chicken from drying out. Bake in a 350°F (180°) oven for 10-15 minutes until the internal temperature reaches 165°F.
  2. Stovetop – Heat the frying pan over medium and add enough chicken soup to prevent the chicken from drying out. Add the chicken, cover and simmer until heated.
  3. microwave oven – Add olive oil or butter drizzle to keep it moisture and flavor. Cover gently with a pulse for about 2 minutes and heat. If it’s not hot enough, turn the chicken over and cook it again in a 30-second burst until it gets hot again.

  • For best results, it is best to marinate periperi chicken for at least 12 hours to fully absorb all the flavors.
  • Store the marinated chicken in an airtight container or ziplock bag. Refrigerated – Can be stored in the fridge for up to 2 days. freezer – Can be frozen for up to 2 months.
  • Baked Periperi Chicken – If you’re not in the mood to grill, simply cook at 400° (205°) for 35-40 minutes. Or until the internal temperature reaches 165°C.
