browning sauce is a three-ingredient Jamaican sauce that revolutionizes your everyday stews, soups, barbecues, and even cakes. The complexity of the perfect combination of sweet and salty flavors creates a beautiful color. This homemade sauce is sure to become your new favorite condiment, along with Worcestershire sauce and oyster sauce.

I used to buy jars of Grace Browning sauce until a friend showed me how to make it from scratch. You’ll be surprised at how easy it is to make this famous Caribbean seasoning. After seeing this method, you will definitely never buy another jar. 😉

A rich charred sauce that adds deliciousness to soups and stews.

What is browning sauce?

Caribbean countries use this seasoning in many recipes. Adding simple ingredients like water, sugar and salt to a main dish can add extraordinary color. Caramelizing sugar creates a richer, deeper color than plain sugar. The flavor added is not noticeable, but acts as an enhancer.

Burnt sugar can be disastrous for most recipes, but it gives this sauce a robust smoky flavor. Adding just a teaspoon or two of homemade seared sauce to flavorful dishes like soups and stews is enough to add flavor. However, a little goes a long way. Too much will make the finished dish a little bitter.

Commercial browning sauce is also available on Amazon, but honestly, when you look at the ingredient list, it can be pretty scary. If you’re looking to buy, Grace and Gravy Master have the highest ratings. However, they all contain additives. So if you want to avoid sodium benzoate and caramel coloring, your best bet is to make your own.

All you need is: 3 pantry essentials For inexpensive sauces without unnecessary additives, it will take about 15 minutes.

  1. brown sugar – Caramelizing sugar is so much fun! Just a touch will balance the flavors and add a kick of flavor. You can use white sugar, but it won’t add as much color or flavor.
  2. boiling water It is most effective because it prevents melted sugar from solidifying.
  3. salt – Add a pinch to balance the sweetness and reduce the bitterness.

How to make browning sauce

Caramelize the sugar and carefully add the hot water.

  • caramelized sugar – Heat a small saucepan over low heat. Add brown sugar and stir until dissolved. (Photos 1-3)
  • boiling water – When the sugar starts to foam and turns from light brown to dark brown, add boiling water little by little and stir. Be careful not to let the sugar get too dark or it will become bitter. Note: Be careful when adding hot water as the sugar may scatter and cause burns. (Photo 4)
  • cook – Continue stirring for about 5 minutes, add salt and cook until the sauce is done. (Photos 5-6)
  • nice – Remove from heat and let cool. Use immediately or bottle and store in the refrigerator.

recipe notes

  1. Keep the heat low while caramelizing the browning sauce to avoid the sugar burning too quickly.
  2. Keep windows open and fans running to reduce smoke in your kitchen and home.
  3. Add the hot water carefully to avoid splattering the sugar. Having melted sugar on your skin is unbearable (I know from experience). You can also do it in your kitchen sink to avoid messy spills and accidents.
  4. If it melts and starts smoking before dark, reduce the heat or remove it slightly.
  5. If possible, use nonstick pots that are easy to clean.

Precautions for storage

Having a jar of browning sauce on hand makes it super easy to add a little bit to your braised meat. And surprisingly, this slightly sweet sauce adds deliciousness to the cake as well.

Sugar and salt are natural preservatives, so the sauce can be stored in the refrigerator for up to 6 months.

How to use browning sauce

Many mouth-watering Jamaican recipes enjoy a little browning sauce. For a rich, dark color, add it towards the end of the cooking time.

This three-ingredient sauce recipe is a great change-up to your usual stews, soups, barbecues, and even cakes. The exquisite combination of sweetness and saltiness gives it a deep flavor and adds beautiful color to your dishes. Instructions

  • Place a small saucepan over low heat.

  • Add brown sugar and stir until sugar is dissolved.

  • When the sugar foams and turns light to dark brown, gradually add the boiling water and stir. Be careful not to let the sugar get too dark. This will result in a burnt sauce with a bitter taste. Note: Be careful when adding hot water as the sugar may splatter and swell.

  • Continue stirring until the sauce is done, about 5 minutes.

  • Remove from heat and set aside to cool.

  • Use immediately or bottle and store in the refrigerator.
