This is one of those classic dishes my mother used to make for us as a child living in the Caribbean, served with hot sada roti and usually accompanied by kuchera. The recipe uses leftover stewed pork, but you could also use stewed beef or stewed chicken. (leftovers) Or you can go completely vegan if you prefer.
You will need…
1 tablespoon olive oil
1 medium sized onion (sliced)
5-7 cloves of garlic (Crushing)
1/2 teaspoon black pepper
Kidney beans 1kg (washed and trimmed)
1 medium sized tomato (Dice)
1 Scotch bonnet pepper (option)
1 teaspoon grated ginger
3/4 teaspoon salt
2 large potatoes (sliced)
1-1 1/2 cups water
2 tablespoons coconut cream
1 cup leftover braised pork (option)

Prepare the ingredients.
Heat the oil in a wide frying pan over medium heat and add the onion and garlic. Reduce heat to low and sauté gently for 3-4 minutes.
Add the washed and chopped kidney beans (You can also use body beans or kidney beans) Add to the skillet and reduce heat to medium-low, stirring frequently.
Add the tomatoes, salt, black pepper and grated ginger and continue cooking over medium-low heat.
Turn the heat to medium and add water (I cup)coconut cream, potatoes, scotch bonnet peppers (Optional – use as many as you can handle)Cover and bring to a boil, then reduce heat to low but still boiling, leaving the lid slightly ajar.
Submerge everything in water to soften the potatoes and beans.
After about 20-25 minutes, everything should be tender. If you feel like there isn’t enough liquid while cooking, add the remaining water. Add the remaining braised pork and cook, stirring, until all the liquid is absorbed.
Once the water has evaporated and the potatoes/beans are soft (About 5 minutes after adding the pork) Taste it and adjust the salt as per your taste.Turn off the stove and serve.In my case, I opted for steamed rice but as I mentioned above, I much prefer sada roti.
