How to make panjiri at home?
A delicious panjiri recipe from my mother’s kitchen. If you follow the steps carefully, the taste will definitely change.
material
• Desi Ghee 1kg (India’s best ghee brand)
• Green Moongsabut Dal 1kg
• Atta 1kg
• A bowlful of ground fox nuts, coconut (shredded or dried), almonds, and cashews.
• Jaggery 0.5 kg (or more depending on your preference)
Recipe:
1. First, take 1 kg of desi ghee and melt it in a large pot.
2. Once the ghee has melted, add the ground green moongusabbut dal. Ground dal is easily available from the market.
3. Cook the dal in the ghee over low heat for 30-45 minutes until it turns slightly brown and the raw aroma has reduced and continue to roast.
4. Once the dal turns brown, add 1 kg of flour to the mixture. Simmer the mixture over low heat for another 30 minutes until brown.
5. After some time, add the bowl with ground foxnuts, coconut and all your favorite dry fruits to the mix and roast for 10-15 minutes. Make sure all ingredients are mixed well.
6. Turn off the heat and let the panjili mix cool for 15-20 minutes.
7. Now add 0.5 kg of jaggery to the panjiri and mix well. Make sure the mix is not too hot when adding jaggery. Otherwise, the mix will melt and become sticky. Maintain the rough texture to achieve the perfect panjiri.
8. Panjiri is completed! You can transfer it to a steel container and store it all winter long, eating a little each day.
