I get so excited when I share an easy yet hearty recipe because it gives you more value for your money. This Sausage Egg Casserole provides a hearty meal without much effort. You can serve it for breakfast, lunch or dinner. Amazing!!
But back to the point: it’s a base of sausage, eggs and bread, with cheese for extra flavour. You can put almost anything in it, so it’s a great opportunity to get creative. This easy breakfast casserole is a great way to organise your fridge and avoid food waste 😉).
What you need for this breakfast casserole
- Pork sausage – One pound is plenty, it doesn’t have to be pork, chicken, turkey or even just beef sausage will do.
- egg It’s the star of this fluffy and hearty casserole.
- Dairy products – Milk and cheese give the casserole body and flavor.
- bread – What a great way to use day-old bread: cube it and make a hearty bread pudding.
How to Make Sausage Egg Casserole
- preheat Preheat oven to 350°F (175°C).
- sausage – Sauté sausage in a large, deep skillet over medium-high heat for about 10 minutes until no longer pink and the sausage crumbles easily and is evenly browned.
- drain Use a colander to remove excess fat and set aside to cool.
- Sauté – Melt the butter in a frying pan and add the onion, pepper and garlic. Cook over medium heat for 3-5 minutes until soft. Set aside to cool.
- assemble – In a large bowl, whisk the eggs and milk. Add the sausage and sautéed vegetables and mix. Add the shredded cheese, Creole seasoning, salt, baking powder and melted butter. Mix until well combined.
- Preparing the baking dish – Lightly oil a 9×13 inch baking dish and place the cubed bread in the bottom. Pour the sausage and egg mixture over the bread, spreading it evenly over the bread.
- bake Bake for 40-45 minutes or until golden brown. The casserole will be firm and a knife inserted into the center will come out clean. Let rest for 10 minutes before serving. Serve warm.

Recipe Notes

Advance preparation
Prepare the casserole until you are ready to bake it. Cover with plastic wrap or foil and refrigerate for 1-2 days or freeze for 2-3 months. When you’re ready for breakfast, bake according to instructions.
Another time-saving trick is to freeze in small portions. Instead of one baking dish, use multiple ramekins. Reduce baking time accordingly.
How to store leftovers
If stored properly, it will keep in the fridge for 3-4 days or can be frozen for 2-3 months. Thaw in the fridge overnight and bake to reheat.
