Before we get into the actual recipe, let’s talk about the elephant in the room. Yes, it is very rare to find pickle recipes in the Caribbean (Explained in the video below). That being said, you’ll notice that I tried to add some Caribbean flavor and twist to a simple fridge pickle recipe. I used what was in the garden at the time.
What you need…
2-3 pounds pickled cucumbers
1 1/2 cups water
1 1/2 cups rice vinegar
2 bay leaves (option)
6 cloves garlic (broken)
2 teaspoons salt (This time I used sea salt)
1 tablespoon sugar
1 teaspoon mustard seeds
1 teaspoon black pepper
1 pimento pepper (also known as seasoning pepper)
6-8 wili wili peppers
2 tablespoons chopped dill

After washing the cucumber, cut off the top and bottom. Then cut it lengthwise into 4 equal parts. (spear). Another option is to slice lengthwise into 1/4- to 1/8-inch pieces or 1/4-inch wheels. Rinse and drain.
Heat the vinegar and water combination over medium-low heat. Do not boil. Then add salt, sugar, bay leaf, peppercorns, mustard seeds and garlic.
When you see small bubbles at the edge of the liquid, turn off the stove and let the mixture stand. (brine) until completely cool.
For a spicy version, add 1/2 tablespoon of chopped dill to the bottom of the jar, followed by chopped wiliwili peppers and cucumber spears, and 1/2 tablespoon of dill on top. In the video I explained why you need to leave space or room for 2-3 additional spears at the end.
Do the same with the mild version, dividing the brine. (cooling) between both bottles (Sterilized). Add garlic, pepper, etc.
Once the jar is full, shake it well, put the lid on, and put it in the fridge for 48 hours to let that wicked flavor meld. Flavorful and refreshing, it will instantly solve your pickle cravings.
When cooking highly acidic foods, be sure to use cooking vessels made of non-reactive materials such as stainless steel, glass, ceramic, or Teflon. Pots made of metals such as aluminum, copper, and cast iron react with acids, giving food a metallic taste.
