I discovered this grainless apple cinnamon muffin recipe, made in applesauce. (Is it not so true that necessity is the mother of invention?)
On this particular morning I only had five eggs in the fridge. Especially when each child can easily eat three of them! I had coconut flour, homemade applesauce and coconut oil in my hand so I mixed them…Voila!
Kids demanded them for a week in a row at breakfast every day, and a delicious go-to (and again “Togo”) breakfast recipe has been born!
Best Apple Cinnamon Muffins: Rest from Standard
I’ll be authentic here… I’ve always been a great bakery. Still, the lack of grain means that many scrambled eggs for breakfast, and we all have days when only baked goods are. Even today, my Hashimoto is gone and I can eat grains (and even gluten!), but I still enjoy coconut flour baked goods.
It’s always a great feeling to get it right and bump into recipes that will make both moms and kids happy. These remind me of apple pie, but the muffin version.
If you didn’t have a coconut flour muffin before, know that it’s a little smaller and more dense than a typical muffin. Still, they have that bread-like texture and an apple-flavored aroma. They are full of protein and fiber, gluten-free and grain-free. These muffins use both coconut flour and coconut oil, not to mention all the great health benefits of coconut.
These apple cinnamon muffins maintain a regular rotation in our home and kick off the breakfast section of my wellness mama cookbook. Like almost every recipe in my cookbook, this muffin recipe takes less than 30 minutes to make, uses real food ingredients and does not produce many dirty dishes to wash away.

Apple cinnamon…or whatever flavor you want!
I conveniently chose this applesauce and cinnamon combo, but these muffins are extremely versatile. I discovered that with a few simple changes you can turn this recipe into coconut flour cinnamon apple pancakes!
Try these mixins and try changing things by using muffin or pancake recipes as a base.

Before blending, shrink the applesauce in ¼ cups and add ripe bananas

Stir in ½ cup of toasted chopped nuts, like walnuts

Mix in fresh cups or frozen blueberries or raspberries

Add ½ cup chopped apples to get extra texture

Add 3 tablespoons of cocoa powder to make a muffin that is almost like a cupcake

Top shredded coconut before baking for extra crunch
- Skip the apple and make it Orange cranberry or Lemon Blueberry Muffins!
Coconut Flour Apple Cinnamon Muffin
A hearty breakfast muffin that can be personalized to your specific preferences.

Preheat the oven to 400°F.

Apply coconut oil to the muffin pan or use a silicone muffin cup or paper liner

In a large bowl, mix eggs, applesauce, coconut flour, cinnamon, nutmeg, ginger, baking soda, baking powder, salt, vanilla, melted coconut oil or melted butter, honey and milk until smooth. Let the muffin dough sit for 5 minutes so that the coconut flour can absorb moisture.

Scoop the batter into a muffin can using a 1/3 cup measurement.

Bake for 12-15 minutes until the top turns golden and gushes out after light touch.

Let cool for 2 minutes and drizzle the top of the muffin with excess honey if necessary.

Enjoy warm storage in a warm container. Up to 3 days.

If you often need breakfast, try making and freezing these large batches. Thaw at the counter overnight before eating.
Try adding diced apples and chunks of apples to enhance the flavor of the apples. Fresh apples add more texture. If you like tangy bites, choose Grandma’s Smith Apple. Pink women and honeyscrisp offer a sweeter flavour.
