Summers around here are hot, and sometimes cool summer treats are needed. This is a summer snack I make while drinking coffee in a cool popsicle foam, like chocolate chip cookies! It’s the perfect summer dessert with creamy coffee flavor and crispy chocolate chips.

This recipe creates four popsicles, so you don’t need a lot of ingredients. Perfect for leaving a bit of brewed coffee for use or when you have a partial can of coconut cream. Coffee lovers can certainly double the recipe!

Some recipes require sweetened condensed milk or coffee cream, but both of these are ingredients I’m trying to avoid. Instead, coconut cream is one of the star ingredients here.

Have you ever opened a can of coconut milk and found a thick, creamy layer on top? It’s coconut cream. You can make your own coconut cream or use canned cream that is free of BPA. Along with coconut cream, this iced coffee popsicle recipe tastes like a frozen coffee latte. Tip: Do not confuse it with “coconut cream.” Usually, a significant amount of sugar is added.

In addition to coffee and coconut cream, I like to add chocolate chips to add crunch, vanilla for flavor, and small honey for sweeteners. Chocolate gives a mocha flavor to pops of ice. If you like black coffee, you might want to reduce the amount of honey or increase it if you like something a little sweet.

Tips for making homemade popsicles

Popsicles always please the crowds in our home. I like the homemade variety. When making popsicles, you can add all kinds of healthy ingredients, such as fresh fruit, healthy coconut milk, and even probiotics. At the same time, I can rule out all unwanted ingredients and adjust the sweetness level to my liking.

I make popsicles often enough, so it’s helpful to have a popsicle-shaped set (or two!) in them. These are the ones I use. However, if you are creating a large batch or don’t have a mold, there are many other options.

You can also use small cups, muffin can wells, or ice cube trays. Whatever you choose, cover it with a sheet of aluminum foil after filling it, and cover the stick through the foil with a porkless mix. Wooden toothpicks are suitable for ice cube tray popsicles.

Brewing coffee

The majority of the flavor comes from coffee, so it’s important to start with delicious coffee. I like it Pure coffee beans or Four Sigmatic Mushroom Coffee (Use Code Wellness Mama for a discount). Instant coffee is usually not that tasty (don’t come to instant coffee fans!). I often brew strong batches of coffee My French media And use it for popsicles.

Chocolate Chip Coffee Popping Candy is a chilly summer snack made with coconut cream, coffee and chocolate chips.

  • In a small bowl, whisk the coconut cream, coffee, honey, vanilla and salt until smooth.

  • Carefully pour the mixture into popsicle molds.

  • Slowly tap the mold several times on the counter to help the mixture settle down and allow air bubbles to escape.

  • Split the chocolate chips evenly into the coffee mixture.

  • Insert the popsicle stick, place in the freezer and sit until completely freezing, usually about 4 hours.

  • If you are struggling to remove popsicles from the mold, run them under warm water for a few seconds.
  • My kids like the crispy chocolate chips on top, but you can also mix them evenly. First freeze the mixture a little, then stir the chocolate chips into the mold when the batter is consistent.
