Banana fritters are a popular snack and breakfast food in Africa, but they are also loved in the Caribbean. And each household has its own version. Some are made with milk and eggs, while others are not. These are vegan and have no eggs or milk, but they taste just as good (or better 😉).
I’m not going to lie. It was completely selfish of me to make these. It’s been a while…and the peeps don’t know anything because I ate it all before they got home. I’m hiding the photos I took.
Super easy banana fritters
These fritters have been my favorite since I was a teenager. You can make it in your sleep, and I’ve tried many different methods, but I’ve never thrown it away. I absolutely love it!!!! It’s an anytime food if you ask me.
I made 2 batches for the blog. One with coconut flakes and one without. Yes, there is something going on with Coconut and I. So, if you’re a coconut addict like I am, give coconut a try.
ingredient list
- ripe banana: They need to be ripe, but for extra banana-ness, slightly overripe bananas are even better (is that a word?).
- flour: Out of curiosity, I tried using half whole wheat flour and half all purpose flour to see what would happen and it worked out great. I love the nutty flavor of whole grains, but 100% can be overwhelming. The all-purpose flour balances it out, giving it a slightly nutty flavor while still keeping it fluffy.
- brown sugar: This ingredient sweetens the banana fritters, makes them moist, and adds a molasses flavor.
- nutmeg: It has a subtle holiday-like flavor with a delicious sweet nuttiness. I love nutmeg, but you may not feel the same way, so feel free to omit it if you wish.
- vanilla: The rich aroma adds depth to the taste. And of course, it’s even better if you make it yourself vanilla essence.
- oil: It may not look good, but you need oil to fry fritters. Once in a while, it doesn’t kill us.
How to make banana fritters
- pureed banana: Mash the bananas with a spoon or puree them in a food processor or blender. (Photo 1)
- combine: In a medium bowl, mix together the flour, sugar, baking powder, and salt, then add the mashed bananas. Mix well until the consistency of a creamy dough. (Photo 2)
- Flavor: Finally add the nutmeg and vanilla. Let stand for 10 minutes. (Photos 3-4)
- hot oil: Heat 1/2 inch oil in a large skillet or cast iron over medium heat (375°F/190°C) until hot but not smoking. (Photos 5-8)
- fry: Scoop out the batter and fry, turning once, until golden brown, about 5 minutes. Do not overcrowd the pan (this will cause it to become soggy and absorb excess oil).
- serve: Remove fritters using a slotted spoon and place on paper towels. Serve hot. Make it even more decadent by drizzling it with maple syrup or dusting it with powdered sugar.
Recipe variations
Cooking in the airfryer is healthier.
- Line the airfryer rack with parchment paper and lightly spray with cooking oil.
- Next, gently scoop the fritter dough onto the parchment paper, leaving enough space between the fritters so they don’t stick together.
- Air fry each batch at 360°F/182°C for about 8 minutes. Alternatively, you can bake in a preheated oven at 205°C for 10 minutes.
Add cinnamon, cloves, ginger, or chopped nuts to the dough. Or sprinkle with cinnamon sugar while still hot. Hmm!
tips and tricks
- The important factor here is oil temperature. If the oil temperature is too low, it will absorb too much oil. However, if it’s too hot, the outside will burn before the inside is cooked. I always taste the remaining dough before making it.
- When frying, use a wider pot than the burner (less chance of burning) and fill it no more than half full with oil. If you’re not sure if your oil is at the right temperature, an instant or candy thermometer will read 375°F/180°C.
- If you want a very light dough, start with 1 1/2 cups flour and add more as needed.
- Homemade fritters come in a variety of sizes and shapes, so don’t expect a perfect cookie cutter.
- You can also use all white flour instead of half whole wheat flour.
How to prepare and store
Make the dough the day before and fry the fried fritters. Or you can make them ahead of time and crisp them up the next day in the air fryer or in a preheated oven at 350°F/177°C. The same goes for leftovers.
