I think it was about 16 years ago when I first shared this recipe, so I thought it was time to update it a bit. Although still vegan, vegetarian, and gluten-free, you’ll notice some subtle differences between this version and the one originally shared.
What you need…
1 1/2 tablespoons olive oil
1 medium onion (slice)
6 cloves garlic (broken)
1/2 teaspoon black pepper
1 pimento pepper (also known as seasoning pepper)
Habanero pepper 3/4 (remove seeds)
1 teaspoon grated ginger
Caribbean green seasoning 3/4 tablespoon
4 medium potatoes (slice)
1/2 tablespoon salt
3 pounds of eggplant (Baigan) cube
2 cups of water
1 cup chopped tomatoes

Whether you add habanero or other hot chili peppers depends on your spiciness tolerance.
Prepare all ingredients.
Heat your favorite oil in a wide pot over medium heat. Add onions and garlic. Reduce heat to medium/low and cook for 3-4 minutes.
Next, add pimento pepper and habanero pepper. (option)Caribbean green seasoning, black pepper, and grated ginger. Cook over medium-low heat for 3 minutes.
Potatoes take longer to cook than eggplants, so we recommend adding them at this point and frying well.
After 5 minutes, add the prepared eggplant and stir well. Don’t worry if it overflows the pot as it will wilt.
Add water with salt and bring to a boil. Reduce heat and simmer for 20 minutes. I didn’t put a lid on the pot.
I like to add the chopped tomatoes at this point, then taste and adjust the salt to taste after 3 minutes.
When done, the potatoes will be soft, the eggplant and bay guan will fall apart, the sauce will thicken, and it will be the most photogenic dish you’ve ever made. However, the appearance alone does not fully convey its wonderful taste.
Just pair it with warm sada rotiin my opinion, it’s the perfect meal.
